Happy Birthday Mom!!
Trying a new recipe for her birthday cake. So far so good. Didn't burn or over cook the Chocolate Cracked Cake (Flowerless Cake). Can't wait to have a slice!
Chocolate Cracked Cake
1pound bittersweet chocolate, chopped into small pieces
1stick unsalted butter
9 large eggs separated
3/4cup plus 1 tablespoon granulated sugar
2cups heavy cream, cold
Confectioner's sugar for dusting
~Directions
Preheat oven 350degrees f
Butter 9-inch spring-form pan
Chocolate and Butter into top double boiler. Heat (not touching) about 1inch of simmering water until melted.
Whisk egg yolks with sugar in mixing bowl until light yellow color.
Whisk a little of the chocolate mixture into the egg yolk mixture to temper the eggs- (this will keep the eggs from scrambling from the heat of the chocolate). Then whisk in the rest of the chocolate mixture.
Beat egg whites in a mixing bowl until stiff peaks form and fold into the chocolate mixture.
Pour into the prepared pan and bake until the cake is set. Top starts to crack and a toothpick inserted into the cake comes out with moist crumbs clinging to it.
Bake 20-25 minutes Let stand 10 minutes then remove sides of pan.
Whip the cream until it becomes light and fluffy
